Asian Kelp Noodles With Peanut Sauce (Keto Friendly)
A healthy variation on my comfort food favorite – Chinese restaurant style Cold Noodles With Sesame Sauce

Peanut Sauce
  1. Throw the kelp, shredded carrots, and zucchini noodles into a bowl. Stir thoroughly to get the carrots and zoodles mixed in with the kelp.
  2. Get a second bowl to make the sauce. Combine the peanut butter and the coconut aminos or soy sauce (use coconut aminos if doing keto). Mix thoroughly. And the water and squeeze the lime and continue to mix. Finally, add the red pepper, sesame oil and stevia.
  3. Pour half of the sauce over the noodles. Mix to get the sauce onto the noodles on the bottom of the bowl. Add the remaining sauce and mix again. Don’t worry if you can’t get the sauce to cover all the noodles. If you let the noodles sit for 4 hours like recommended, the noodles will soften and everything will mix easily.
  4. Throw the garnishes on top as a final step. Then put a lid or tin foil over your bowl, and put in the refrigerator. Ideally, serve it in 4 to 6 hours.
